Paleo Chicken Salad with Dates & Walnuts

Ingredients:

For the Chicken*

  • 1 lb chicken breasts cut into strips
  • salt & pepper
  • ¼ tsp onion powder
  • ¼ tsp dried poultry seasoning or 2 tsp chopped fresh fresh rosemary, sage, and thyme
  • 1-2 Tbsp ghee or coconut oil

For the Salad

  • 1 cup raw walnuts, roughly chopped
  • ½ tsp cinnamon
  • ½ cup roughly chopped pitted dates
  • ¼ cup Paleo mayo
  • 2 tsp fresh lemon juice

Directions:

  1. Season chicken with salt, pepper, onion powder, and poultry seasoning.
  2. Cook chicken in oil.
  3. Toss walnuts with the cinnamon.
  4. Toast the walnuts in 300° F oven about 10 minutes.
  5. Chop chicken.
  6. Serve over greens.
