Paleo Chicken Salad with Dates & Walnuts

Yield: 4-6 servings
Ingredients:
For the Chicken*
- 1 lb chicken breasts cut into strips
- salt & pepper
- ¼ tsp onion powder
- ¼ tsp dried poultry seasoning or 2 tsp chopped fresh fresh rosemary, sage, and thyme
- 1-2 Tbsp ghee or coconut oil
For the Salad
- 1 cup raw walnuts, roughly chopped
- ½ tsp cinnamon
- ½ cup roughly chopped pitted dates
- ¼ cup Paleo mayo
- 2 tsp fresh lemon juice
Directions:
- Season chicken with salt, pepper, onion powder, and poultry seasoning.
- Cook chicken in oil.
- Toss walnuts with the cinnamon.
- Toast the walnuts in 300° F oven about 10 minutes.
- Chop chicken.
- Serve over greens.
